Very sharp, very nice, very cool. Great for precise scalpel work with veggies.

Little knife for quick work
Got this knife to work on eels, but now use it as my everyday, go-to blade. Slicing vegis, small blocked sashimi, makes the work quick and easy. And now I learn that there is a special eel knife - shorter handle, longer blade? And the markets which carried live eels no longer has them, its a holiday thing.

excellent little blade.
I needed a very precise utility knife for intricate garnish and delicate food prep. This knife does everything I need it to and more. Excellent steel, sharpens very nicely and easily (good for pro and novice sharpeners) Blade does require care, but well worth the small effort needed.
