No it doesn't. It just cycles through displaying the Max/Min/Avg values as you pres the button.

Can this be used for a kiln? 1200 degrees C ?

Unit comes with 2 k type thermocouples. Specification says, for k type, suitable for temperatures up to 1372 C. I have only used it for normal temperatures so would not know. You would have to remove some of the covering from the wire as that would probably melt at that temperature.

Does this come in protective case ? (Pouch)

No. No case or cover. Just a cardboard box.

No manual that I know of, but it is fairly self explanatory in that the buttons say everything it can do. But I do seem to remember that it is actually a generic device and comes with other names and if you just google 'twin channel k type temperature device' you can get instructions for other brands of the same type/unit. Hope this helps.
