how do you block a number I can't see a 'block' button like on other models? Thanks

If you press the CID button to look at last call or missed call and then once you've found the number click on menu go up twice and you'll see save call block click OK and it's done x

is there a way to turn this to answer phone only so it doesn't ring when we're not there?

Go to tool icon on screen, locate ringer set up, go to base unit section, follow prompts.

Can these phones be used with a Hyperoptic line?

I am assuming you mean fibre optic broadband to the building. A system used for multi occupancy in London. If there is a phone socket then yes as std broadband works via shared line. ( as with Sky, Virgin etc)
