can it hold a water bottle on the side?

Do the backpack straps tuck away, or snap onto the back when not in use? Is the shoulder strap removeable? Is the size ok for a short person? Thanks!

Yes, straps snap to bag to put away. Shoulder strap is removable, but it's a rather difficult mechanism so I don't take mine off. All straps are adjustable so that would be find for any size person. It's definitely my favorite bag ever - it holds a TON.
